Recipe for Smoked chicken

This recipe was prepared in my Cameron’s Stovetop Smoker.  This is a heavy duty professional chef quality all stainless steel construction Stovetop Smoker.  It is a fantastic device that can be used to smoke foods both indoors and outdoors.

4 chicken quarters, 2 large carrots, 1 large onion, 2 stocks of celery, 1 large lemon, 1 tbsp olive oil, fresh lemon juice, 2 tbsp minced garlic, 2 tbsp Cajun seasoning, 2 tbsp black pepper, 1 tbsp Applewood chips.

Place the wood chips into the center of the smoker base.  Place your drip pan, then food rack on the wood chips.

Wash the chicken quarters; and place them into a large bowl.  Squeeze the lemon juice into the bowl with your chicken.  Add the garlic, Cajun seasoning, black pepper and olive oil into the bowl, then mix to cover your chicken.  Wash the veggies, cut into slices and place them on the food rack.  Slice the lemon and lay on the vegetables.  Placed the seasoned chicken on top of the vegetables.  Cover the pan with the top, or tented aluminum foil.  Cook over a low to medium heat for 35 to 45 minutes. Uncover the chicken, add BBQ sauce and place under the broiler until the chicken is brown and crisp.
